In order to appreciate cheese properly, it is important to know how it is made. Dairy cows produce milk, which is a key ingredient in cheese. This milk is transported to factories, where it is tested for quality. Almost 10 pounds of milk go into one pound of cheese.

While nobody knows who made the first cheese, Legend has it that an Arabian merchant accidentally combined milk with a pouch made of a sheep stomach. While there is no proof that this story is real, it has been confirmed that cheese was first made in Asia, and then spread to Europe.

The mixture is cooked and stirred until the desired temperature and texture is acquired. Then the whey is drained from the mix, leaving the firm and formed curd. Next, the cheese is pressed to determine the shape. Depending on the size, cheese may be pressed for up to 12 hours. Finally, the cheese is cured. This step is the longest, and can take over 10 years. The cheese is moved into a temperature and humidity controlled room where it fully develops its flavor and texture.

As the years go by, cheese production continues to increase. According to the Wisconsin Milk Marketing Board, over 10 million pounds of cheese were produced in the year 2012 alone. This number continues to increase.
